The know-how of kithul is alone held by Sri Lankan farmers and families who have preserved this island secret for generations.
Masterful tappers climb 40 feet up on handmade ladders 3-4 times a day to extract a translucent yellow sap that is dehydrated over heat - (8:1) - to form syrup.
This homespun kithul presents in a range of golden hues and fruity-to-smoky flavour notes reflecting variations in environment, biology, and each small-holder's tapping and crafting process. Unfortunately, in mass sourcing & production kithul often then sees refined sugar addition and a standardization of its taste to 'sugary'. Our aim at Kimbula, therefore, is a return to the roots - going straight to farmers to select, then refine and craft small batch taster's blends of pure kithul.
The result - a signature syrup that delivers on taste & quality while retaining its wild-crafted magic. In valuing pure kithul you support & respect the livelihood & craftsmanship of this globally unique farming community.
